Following the metaphorical juxtaposition of the medieval table "Ars Magna" by Ramon Llull, our CHARDONNAY LINEA ARS MAGNA is reflected in the Principle "Bonitas," a noun that expresses goodness, good quality, as well as honesty and also fertility. The extremely scrupulous and pure selection of our Ars Magna Chardonnay, cultivated in a vocated soil, both by composition and location, allows the variety to express all its aromatic power and minerality. The patient workmanship in the cellar and the combinatorial art of aging woods will complement the goodness and refinement of this ARS MAGNA LINE CHARDONNAY.
Harvesting and winemaking
Manual harvest, with bunch sorting, destemming and subsequent berry selection. The berries undergo cold pre-fermentation maceration for about 48 hours, after which they are soft-pressed. Fermentation takes place in new French oak barrels. It remains in barrels for the entire maturation, generally for 12 months, on its fine lees performing bâtonnage. After bottling it rests for at least 12 months in bottle.
