Following the metaphorical combination of Ramon Llull's medieval table "Ars Magna", our CABERNET SAUVIGNON is represented by "Potestas", as it expresses in Latin the meaning of powerful, capable, dominant. Cultivated on a hillside with clay-loam soil facing the sea, it surprises every year with its excellent ability to
reach perfect grape ripeness. The combination of much care in the vineyard and in the cellar to interpret each single vintage, makes for a powerful interpretation of this label from the ARS MAGNA line.
Harvest and vinification
The harvest is manual with bunch selection, destemming and berry sorting. The berries thus selected undergo cold pre-fermentative maceration for about 48 hours. Fermentation takes place at controlled temperature, partly in stainless steel tanks and partly in wooden vats, with subsequent maceration on the skins for 10-15 days. After racking, the wine obtained is placed in new, fine-grained French oak barrels, where it undergoes malolactic fermentation and subsequent maturation for a duration of about 18-22 months with frequent bâtonnage. Bottle aging continues for at least 18 months.
