The Chardonnay rows, arranged east-west, are cultivated on a specific area of sandy-loam composition. Vineyard management is meticulously carried out according to climatic conditions, thanks to the predominantly manual work of our team. The grapes thus obtained reach perfect aromatic ripeness, allowing us to produce a wine of character with a strong mineral component.

Manual, with selection and destemming

VINIFICATION:
Stainless steel, 48-hour cold pre-fermentation maceration

AGING:
On fine lees for 9 months with bâtonnage in stainless steel, 5% in second-use French barriques

6 months

5,800 vines/ha

PALATE: 
Balanced, clear mineral note, persistent and savory finish; the prolonged time on the lees gives a spiciness that almost recalls woody notes, a pleasant combination of the exchange during the months of aging
