Following the metaphorical juxtaposition of the medieval table "Ars Magna" by
Ramon Llull, our Cabernet Franc is represented by "Magnitudo," in
as it not only expresses in Latin the meaning of greatness, strength,
importance, but also nobility of spirit. Cultivated in a specific plot of
clay loam soil-the outer edge of our "amphitheater" overlooking the
sea-the Bordeaux variety of excellence achieves excellent and as
rare grape ripening. The combination of different clones and rootstocks of
Cabernet Franc, planted according to the location and soils present in the
hillside dedicated to this variety together with constant manual care in the vineyard,
make this label from the ARS MAGNA line a powerful revelation.
Harvesting and Vinification
Harvesting is by hand, with bunch selection, destemming and sorting of the
berries. The grapes thus selected undergo pre-fermentation maceration
cold for about 48 hours. Temperature-controlled fermentation follows,
partly in stainless steel tanks and partly in wooden vats, resulting in
maceration on the skins for 10-15 days. Malolactic fermentation, which
takes place in oak barrels, is followed by a maturation period of about 18-22 months
in wood by performing bâtonnage. It remains in bottle for aging at least 18
months.
